Pasture raised pigs Brush the tongue, cover with cold water and poach for about 45 minutes. Then braise for 2 hours. Leave to cool and remove the skin. Cooked this way, the meat can then be roasted or marinated, or simply sliced and added to a sandwich, seasoned with mustard.
