This cut is lean, flavorful, and cooks incredibly fast. Because of their thinness, yak spareribs are best cooked very hot and very fast, just like a steak. High heat seals in the juices while keeping the meat tender. They’re especially delicious marinated Korean-style — bold, slightly sweet, and savory. Marinate for at least 30 minutes, or ideally overnight for maximum flavor. Quick Korean-Style Marinade: • Soy sauce • Garlic • Ginger • A touch of honey or maple syrup • Sesame oil • Optional: chili flakes or gochujang for heat Sear on a very hot grill or pan, just a few minutes per side.
