With some very spicy dishes, Asian use it raw to soothe the palate. It is used in salads, with a warm vinaigrette, consisting of rice vinegar, ginger, sugar and chili pepper. Bring to a boil, and pour over Chinese cabbage cut into thin strips and mixed with green onion slices. Delicious in soups, it is also consumed stuffed or braised. Chinese cabbage is wonderful in stir-fry dishes. Add ginger, soy sauce, cornstarch, a few drops of sake and a little sugar for an authentic oriental dish. Braise it Indonesian style in the coconut milk with chili, green onions and ginger. Cook for about 10 minutes.
